Serve with 1 cup mashed potatoes and 1 cup steamed veggies.
1 lb (450 g) lean ground beef
1 pkg Stampede BBQ Ribs Seasoning, divided
1⁄2 cup ketchup
2⁄3 cup water
2 tbsp vinegar
1⁄2 tbsp brown sugar
- In a large bowl, using a fork, combine beef and 2 tbsp seasoning. Form into 16 meatballs (about a scant 2 tbsp each).
- Arrange in a single layer in Round or Multipurpose Steamer (it’s OK if they touch). Cover; microwave on high for 4 min or until cooked.
- Meanwhile, in the Wok add remaining seasoning, ketchup, water, vinegar, and sugar. Simmer over medium heat until sauce is combined and starts to bubble. Remove from heat.
- When meatballs are cooked, carefully drain and discard liquid from bottom of steamer. Add meatballs to wok; stir to coat with sauce.
